Whole Wheat Barleycakes
Directions
Makes about 16 3-inch pancakes
1/2 cup barley flour
1/2 cup whole wheat pastry flour
1/2 teaspoon baking powder
1/4 teaspoon salt
1 1/4 cups fortified soy- or rice milk
1 tablespoon maple syrup
1 tablespoon cider vinegar
1 1/2 teaspoons canola oil
1 vegetable oil spray
Stir flours, baking soda, and salt together in one bowl. In a separate bowl, mix nondairy milk, maple syrup, vinegar, and oil. Combine the two mixtures and stir just enough to obtain a smooth batter.
Heat a skillet, then lightly spray it with vegetable oil spray. Pour small amounts of batter onto the heated surface and cook until the edges are dry and the tops bubble. Turn carefully with a spatula and cook the second sides until golden brown, about 1 minute.
